I don't know about any of you but having worked the first full week last week since before Thanksgiving I am already tired. This week I am relying on some staples and some convenience items.
Tip of the week: Buy produce seasonally and meal plan around the produce. You can incorporate any protein with whatever vegetables you have on hand. Try new vegetables you may not have had before or try making them a different way.

My menu for this week I have planned:
Monday:
Parmesan Chicken with Roasted Potatoes and Garlic Green Beans
To make a fresh dinner fast I am using Campbell's Dinner Sauce for the Parmesan Chicken
Potatoes - Use the small ones, wash and toss in olive oil and sprinkle with some rosemary and sea salt. Roast at 350 for 30 minutes or until a fork can easily be inserted.
Green Beans - Par boil and then saute in a pan with some olive oil, fresh minced garlic and some sea salt.

I do a variation of this recipe and will post it mine the next few weeks.

Sausage and Pepper Pasta
*Instead of pasta, I am substituting spaghetti squash

Marinated Pork Chops, Baked Sweet Potatoes, Peas

Sausage & Pepper Pasta
Who doesn't love sausage, peppers and onions? As it is cooking, the smell is intoxicating. Usually it is made with marinara or tomatoes and served
with pasta on the side but I like to switch it up and make it as a
one-pot dinner for something fast and easy.
Prep: 10 min
3 tablespoons extra-virgin olive oil
1 pound Italian sausage, casings removed
2 large red bell peppers, cut into ½” pieces
1 large onion, sliced
2 cloves garlic, minced
3/4 cup beef broth
1 teaspoons fine sea salt
½ teaspoon black pepper
Cook the pasta according to package directions, drain and set aside.
Meanwhile, heat 1 tablespoon of the olive oil in a skillet over medium-high heat. Add the sausage and cook, breaking it apart with a fork or spatula, until it's browned and cooked through, about 10 minutes. Remove sausage to a bowl and set aside.
Return to the skillet and add the remaining olive oil. Add the peppers and onion and sauté until tender, stirring occasionally – about 5 minutes. Add the garlic and cook, stirring continuously – about 1 minute.
Return the sausage to the pan and add the cooked pasta and broth. Add the salt and pepper and bring to a simmer and cook 5 minutes.
Remove from heat and serve in bowls.
You can top with chopped parsley or Parmesan cheese if you like.

Thankful to be Blessed or Something Like That
Every year for the past few years we sit and watch our social media newsfeed flood with daily thankful posts. Is it just us or are these effing annoying? Are those of you who do these only thankful in November? Why don't you feel the need to express your thankfulness and gratitude the rest of the year? We won't post on Facebook and join the masses but here is our take on top 25 things I am thankful for...
I am THANKFUL for:
- Tampons - honestly without them the whole world would be a bloody mess!
- Condoms and birth control - because some people just should NOT reproduce.
- Inspirational quotes and photos like the above - Don't the leaves give it SO MUCH more meaning? I mean I wouldn't be able to express my feelings without something like this!
- Memes. Without them, how would I be able to properly express myself? Words? No pictures?
- Facebook, for reminding me how smart I am and how dumb most of my 'friends' are (and racist, and xenophobic, and bigoted, and HOLY SHIT PEOPLE)
- What number are we on?
- Ugh
- Yeah, so, about that 25...
- Alcohol. Any of it. All of it

PIZZA. It never lets you down. It always delivers. It doesn't talk back. It is good warm or cold. Always satisfying. Good plain or with toppings. Pizza doesn’t cheat on you, it doesn’t lie. Pizza is always there for you when you are drunk or sober.
- My significant other for walking the dog, taking care of the kid... HAHA JUST KIDDING. Why the effff do you have to give your partner a special call out for doing the things they should be doing anyway? I want a fricken medal for the shit I do every day that no one thanks me for. You know, for being an adult. If we're going to push for equality, stop acting like your S.O. doing the basic things any parent/adult should do is a hashtag BIGDEAL.
- Benadryl...it means EVERYONE in the house gets a full night of sleep.
- Vague thing I'm thankful for, with even more vague follow up comment, so people will ask 'what's wrong?'
- Autocorrect - For always keeping my on my ties and making me look like a ducking iceberg.
- That this is our own person blog so we don't have to do numbers 15-25. You can't make us!
